Easiest Ever (Healthy!) Iced Coffee

With the London heatwave that’s upon us (no complaints, I LOVE the heat!)… I’ve switched my usual BIG hot coffee to this iced coffee every morning, and honestly it’s better than Starbucks!  And also way healthier than any store bought ones that usually have a ton of added sugar or syrups!

So I decided to share my super simple method so you can be your own barista at home too! 😉

You can use any coffee you like – instant, freshly brewed, filter, ground coffee, etc.

Your choice of sweetener – I use this one, but you could use any preferred sweetener (stevia, xylitol, erythritol, etc) or coconut sugar, or none at all (if you don’t like your coffee sweet!) and your preferred milk or plant based milk – or keep it black.

This method is totally customisable (and fail-safe too)!

You could also make this the night before and chill in the fridge overnight, so it’s ready to grab-and-go first thing in the morning!

Either way, I’m hoping the sunshine stays around long enough for us all to enjoy this for more than just a few days!

Recipe

Ingredients

2 heaped tsp. instant coffee
2 tsp. (or more depending on taste preference) granulated sweetener (I like this one)
Boiled water (in the kettle)
1 cup ice cubes
400ml cold water (more or less, depending on the size of your glass)
Milk of choice or plant based milk (I use regular semi-skimmed or soya milk)

Method

Place the coffee and sweetener in a large heatproof glass or mug. Add a splash of boiling water (around 1-2 cm up the glass) to dissolve the coffee and sweetener, and stir. Add cold water (regular tap water is perfect!) until 1/2 way up the glass. Add ice cubes to fill the glass/ mug (around 3/4 full). Top with milk to fill the glass. Stir with a straw and enjoy! x
