Matcha Latte Energy Balls

If you want all the amazing health benefits of matcha, but don’t want to give up your morning coffee (like me!) you have to try this recipe!

These balls are packed with protein, fibre and healthy fats, as well as all the green tea goodness of Matcha!

They’re TOTALLY delicious, so filling, and will satisfy your sweet tooth cravings healthily.

They’re also gluten-free, dairy-free, refined sugar-free and vegan. Let me know if you try them!

Recipe

1 cup ground almonds
1 cup desiccated coconut (unsweetened)
1 Tbsp. organic matcha powder
4 Tbsp. agave syrup
1 tsp. vanilla extract
2 Tbsp. coconut oil, melted
Pinch of sea salt

For the drizzle: 1 cup vegan (dairy-free) white chocolate chips + 1 Tbsp. coconut oil

Place all the ingredients apart from the white chocolate chips & additional 1 Tbsp. coconut oil, into a food processor or blender. Blend on high speed until well combined. Make sure to scrape down the sides of the processor to ensure everything is fully incorporated. Using your hands, roll into 1 heaping Tablespoon size balls – press together firmly while rolling, add a splash of almond milk if mixture is too dry. They set more in the fridge. Melt the white chocolate chips plus 1 Tbsp. coconut oil in the microwave at intervals or in a pot over low heat – make sure it doesn’t burn. Drizzle the melted white chocolate mixture over the balls or dip the balls into it. Allow to set fully in the fridge for a few hours until serving.

Store in an airtight container in the fridge for up to a week, can also be frozen. Enjoy!!
