Nākd. Blueberry Protein Parfait

Say goodbye to the January Blues with my Nākd. Blueberry Protein Parfait using Nakd’s heavenly Blueberry Muffin Bar (if you haven’t tried these you need to!)

Whilst I love eating Nākd. bars on their own, they also can also be used as nutrient dense ingredients like I’ve done here!

They’re vegan, gluten-free, refined-sugar free, made from all natural ingredients – and this one counts as one of your 5-a day!

It’s scientifically proven that our diet and gut health has a strong influence on our mood. One of the best things you can do for this is to consume plenty of fruit, veg, fibre and antioxidants.

This recipe, along with Nākd’s Blueberry Muffin Bar ticks all the right boxes!

It’s packed full of protein, calcium, gut-loving fibre, antioxidants and a wealth of other nutrients.

It makes a perfect breakfast, mid-afternoon or post workout snack, or even late night healthy dessert!

So if Blue Monday has you feeling down, grab life by the blueberries and give your body and brain the fuel they need to boost your feel-good hormones. Enjoy!! x

Recipe:

Serves 1

170g Greek yoghurt or thick dairy-free natural yogurt (e.g. Alpro Greek style plain or coconut yoghurt)
1/3 cup uncooked rolled oats
1/3 cup fresh blueberries
1/2 tsp cinnamon
1x nākd. Blueberry Muffin bar, chopped into small chunks
1 Tbsp. agave syrup plus extra for drizzling

Start by mixing the yoghurt with 1 Tbsp. agave syrup. Then in a large single-serve glass or bowl layer half of the yogurt, oats, blueberries, and nākd. Blueberry Muffin bar, then the other half of everything in that order again. Sprinkle with the cinnamon and drizzle with agave syrup. Allow to sit for at least one hour (or overnight) for the flavours to mingle. Tuck in and enjoy!
