Chocolate Nut and Sea Salt Clusters

If you’ve read my books or been a client of mine, you’ll know that I recommend eating chocolate every day, even if you’re looking to lose weight!

Nuts are another snacking staple I recommend daily. I’ve used walnuts here as they’re an amazing source of omega-3’s, but any type of nuts works perfectly.

The sprinkling of sea salt pairs perfectly with the creamy delectable chocolate and crunch of the nuts, to satisfy all cravings, whilst keeping your health and waistline in check!

Recipe

Makes ~ 20 clusters

340g (12 oz) dark chocolate
2 cups / 230g (8oz) walnuts (or any nuts of choice)
1/2 Tbsp coconut oil
Flakey sea salt (e.g. Maldon)

Line a large baking tray with foil and set aside. Melt the chocolate and coconut oil in a heavy-based pan over a low heat. Keep stirring, making sure you don’t burn the chocolate. As soon as the chocolate has melted, turn off the heat. Add in the nuts and stir well until they are fully mixed in and coated. Spoon heaping tablespoons of the mixture onto the prepared tray. Sprinkle with flakey sea salt. Allow to cool slightly. Place in the fridge and allow to set for several hours. Remove from the baking paper or foil. Enjoy!
